Brinjal/vazhuthananga 2 nos( small)
Vellarikka/Cucumber small piece
Elavanka small piece
vazhakka /Raw plantain 1 nos small (big1/2)
Muringakai/Drumstick 2 nos
Carrot 1 nos small (big ½)
Padavalanga/snake gourd small piece
Grated coconut 2 cup
Shallots (kochulli) 5 nos
Green chillies 4 nos
Cumin seeds 1/2 tbsp
Turmeric powder 1 tbsp
Curd 3 tbsp/turmeric paste 2 tsp, mango-small piece
Salt to taste
Curry leaves 4 stems
Coconut oil 3 tsp
Method:
First wash and chop vegetables to medium length pieces
Chopped pieces should resemble the shape of French fries
Then cook the vegetables by adding 1 ½ cup of water for about 5 minutes in a high flame.
Then add ½ tbsp turmeric powder, green chillies and salt and cook covered for another 15 minutes.
Meanwhile grind coarsely grated coconut, cumin seeds, shallots and ½ tbsp turmeric powder and keep it aside.
When the vegetables are cooked lower the flame and add curd/tamarind paste/mango along with ground coconut paste and then remove the flame after 5 minutes.
Then finally add curry leaves and coconut oil to the avail.
